Im surprised Ive had this blog so long and havent talked athletic shoes with you!  My all-time favorite running/workout shoe is ASICS.  Ive been wearing them for years because they are so well constructed, fit my foot perfectly, no weird arch, and plenty of cushion.   Im crazy for this new design series (GT) in bright pink and orange. 


My current shoe is the ASICS Womens GT-1000 in silver, purple, and aqua.  I found mine at Academy, but they also sell them on Amazon.  At about $100 ($62.60 on Amazon with free shipping), I consider this type of shoe an investment because if my shoes are uncomfortable, dont fit well or wear out too easily, it affects my workout negatively.  I do run in these shoes, but Im not training for any marathons (although I think you could with these shoes).

On Thursday February 12, 2015, Greys Anatomy aired "All I Could Do Was Cry."  The story revolved around two lead characters and the prospect of losing their baby mid-pregnancy.  I wish there would have been one of those scrolling red bars at the bottom of my TV screen, you know the ones, they run most of the time during the winter months to warn of hazardous weather.

Anyway, I watched the episode because I love this show and happen to find myself home, without any kid-transporting or errand-running.  To say the show covered a lifetime of emotions is an understatement.

I was first moved when April became aware there was nothing she could do for her son in utero, that he was in pain.  This was the deciding factor for her to move forward to end her pregnancy. I know that moment, as does anyone who is probably reading this blog.  

Another poignant moment was when Aprils mother-in-law spoke to her about releasing her baby.  The MIL gave April the strength she needed.  I was blessed to have someone do this for me and it came in the form of my best friends aunt.  She told me she would pray for me and while I cried to her on the telephone, she told me she would be my vitamin, she would be my strength.  I hear her words whenever I have the opportunity to see her.

And while April still is holding out for a miracle, knowing they occur, I remember I wanted one too. Who wouldnt?  I wanted to be the medical mystery, I wanted my miracle.  But in my immediate situation I would not have it.  My induction proceeded and I thought my physician was crazy.  But on TV, April and Jackson (her husband) were able to hold their baby for the few seconds that he lived.  Maybe that was their miracle.

When I look at Isaac and Jack together I dont see a whole lot of resemblance. All I see is that Jack is no longer my baby – a little boy has taken place of my chubby firstborn.

I also have a hard time seeing me or Daniel in Isaacs features. But I recall feeling the same way with Jack – he was such a blend of us that I could never definitively say that he looked like either of us. However, I catch glimpses of familiar expressions from both of our families.

To compare the two, I took a little walk down memory lane. And then I see the resemblance of Isaac to Jack. As newborns there is a strong resemblance, these two are definitely brothers.

Daniel even showed some photos of Jack to Jack and asked him who it was. Jack said, "Isaac." I am excited to see what Isaac looks like in a few years.

This past Saturday I took off my mommy hat for the day and spent the entire day wearing my designer hat. Since entering the freelance world and become a full-time mommy, I really dont get many opportunities to immerse myself in the design world. I spent my day with a fellow designer at the TopCon design conference here in Chattanooga at Track29.



The day was a little tricky for me in that I am still nursing Isaac, but Daniel and I were able to coordinate so that he met me right before lunch and then again right before the last speaker of the day. Getting to hear speakers in my field was inspiring for me, and Daniel (along with the help of his sister, Amy) had a fun day with the boys. Isaac did melt down at the end of the day, but the witching hour is always hard no matter who is with the boys.

From a strictly design point of view, my favorite speakers were James T. Edmondson of OhNo Type Company and Bethany Heck from Microsoft. Overall fine artist, Wayne White, did a fantastic job of wrapping up the conference encouraging the attendees to find the things they love and pursue them – even if it is crazy puppets.

Illustrator, Logan Faerber, shared some of his failures and mistakes on his journey as an illustrator, and art director, Adé Hogue, shared his 6 crushing doubts. Doubts and mistakes are things all of us can identify with at some point in our careers.


Wayne White shares his crazy adventures in fine art including his work on Pee Wee Herman.

James Edmondson shared his process for developing typefaces and Bethany Heck went into depth about not being afraid to break the so-called rules of only using 3 typefaces in one work. I think the more experience you have under your belt (and more understanding of the design process) it becomes easier to break these rules. Fresh out of college, it is easier to make mistakes just by not having a good grasp of why you should or shouldnt combine certain elements.

 Logan Faerber shared some of his failures and mistakes, working with Marvel.

Adé Hogue shared his 6 crushing doubts and ways to stay creative.

It was fun getting to screen-print our own t-shirts. Print-making was among my favorite classes in college and I have always thought it would be fun to pursue again at some point. Fresh out of college, I actually purchased the equipment, but I didnt have a good space and I never really got it going. Maybe as my boys get older I will be able to create a studio space at my house. Who knows?



I am feeling very inspired and looking forward to implementing some of what I learned on Saturday into some of my upcoming projects. I have to say that I feel very blessed to have the clients that I have and that I am able to combine a lifestyle of being a stay-at-home mother who can also continue to freelance and keep my creativity flowing. 
 
 

Motherhood has maybe been a slight step back for me professionally, but it hasnt meant losing myself, or my profession. I am so grateful to be able to do both.

Today, our food contributor Jennifer is sharing a healthy recipe for blueberry almond scones.  I really want to try these because my son loves blueberries!

I cant even tell you how much I look forward to Jennifers recipe posts.  You may know Jennifer from her decor and DIY blog, The Chronicles of Home.  If you havent visited or arent a follower, Im sure shed love to have you!



Blueberry Almond Scones

For the most part, Im a creature of habit when it comes to breakfast.  Weekday mornings my daughters and I usually eat one of three things - (1) smoothies and whole grain toast with peanut butter, (2) egg on whole grain toast with fresh fruit, or (3) whole grain hot cereal with dried fruit.  And, honestly, Im okay with this routine.  All of those things work for me on harried weekday mornings and I feel good about eating them and feeding them to my daughters as often as I do.  

Then the weekends roll around and the last thing I want are any of these things since Ive just spent five days in a row eating them!  Thats where the more "special" breakfast dishes come in, like multigrain pancakes or sweet potato hash.  Scones are another of my weekend favorites and Ive been tinkering with my recipe lately to try to make it a little healthier.

In this version I used a double shot of blueberries - both fresh and dried - to get a variation in flavor and texture and to double down on all the antioxidant goodness.  I added sliced almonds for some crunch and protein.  I often use half whole wheat and half white flour in baking recipes to get some whole grain worked in without totally sacrificing the light texture of white flour.

I also played with coconut oil here in place of the typical butter in scones.  Heres my take on coconut oil, and keep in mind that Im not a nutritionist, just a health-minded home cook whos done a little research.  Coconut oil is a heavily saturated fat just like butter.  Theres some research that suggests the kind of saturated fat in coconut oil may be better for those with cholesterol issues than butter.  But for me, there are a lot of "may bes" in the research thats out there and in the end I think its best to use some moderation in your consumption of coconut oil just like you would with butter.

I liked the use of coconut oil in this recipe because it added a very light, subtle undertone of coconut flavor to the scones and still gave them the flakiness of a regular scone made with butter.  These scones will be heartier and a bit more dense than one you might get at your local Starbucks, but Ive found I actually like the healthy-indulgent version better!


Ingredients
3/4 c. white flour
1/2 c. whole wheat flour
3 tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
6 tbsp. refined coconut oil (butter can be substituted)
1/2 c. fresh blueberries
1/4 c. dried wild blueberries
1/4 c. sliced almonds
1/3 c. buttermilk
1 egg
2 tsp. vanilla

Preheat oven to 400º.  Line baking sheet with parchment paper.

Whisk flours, sugar, baking powder, and salt in a medium bowl.  Cut coconut oil in with a pastry cutter until its the consistency of coarse sand.

Gently stir in fresh blueberries, dried blueberries, and almonds.

In a small bowl whisk the buttermilk, egg, and vanilla to blend.  Pour over dry ingredients and fold with a rubber spatula until just combined.

Drop batter in 8 mounds onto prepared baking sheet (about 1/2 c. of batter each).

Bake until golden, about 15 minutes.  Remove from oven and let cool slightly before serving.

I felt so sad for them so I sent them a copy of my book. 

Im often delinquent in checking my P.O. box.  Most of the orders for my book come via in the Internet/Paypal.  Today I happen to be at the Post Office dropping off mail and opened my P.O. to find a huge stack of miscellaneous advertisement.  After sorting through it all, there was an envelope addressed to me, hand-written, highly unusual.

I was shocked and warmed when I opened it.  It was from Lindsey Justice, thanking me for sending along the book. She wrote she has found much comfort in it. 

I dont often receive feedback about  Journeys and certainly have never received any for sending it cold. I never know how it will be received.  Lindseys note was very reassuring the Journeys has a place in this world.  I wish her and her family peace on their journey.

I mentioned in a previous post that I thought coffee was my love language, the truth behind that statement is that quality time is what fills me up.


Daniels work schedule over the last two years hasnt provided a lot of time for quality time, so a last-minute anniversary trip to Gatlinburg was something we were in desperate need of.


It was a trip with kids in tow, but sometimes you just have to make it work. 


We rented a little cabin just outside of Gatlinburg and squeezed in some of the activities that we like best. It has actually been 5 years since our last trip to these mountains and many memories kept flooding back as we drove around and visited old spots we loved. 


Reminiscing is good for the soul and we have a lot of fond memories from experiences in these mountains.


My favorite thing to do on vacation is to eat out for breakfast and we had 3 amazing breakfast experiences, which I will share in a later post.

 

Our first day in the mountains was cold with snow flurries swirling around. We used the day to visit shops that Daniel wanted to see (Daniel and Jack had a blast at Buds Gun Shop, Coleman, the Dewalt Store and the Smoky Mountain KnifeWorks).


We finished out our day with a visit to Bass Pro Shop where we snagged a time slot to see Santa. The boys were both troopers had we finished the day with dinner at Bass Pro.

 

Saturday we woke up to sunshine and decided it was a perfect day to be outside. After a big brunch, we headed up to Newfound Gap. We had hoped to drive up to Clingmans Dome, but the road was closed due to ice.

 

We bundled the boys up and stepped out of the car to freezing temps. The outside temperature was a balmy 30º but the windchill was probably in the teens. We huddled together for photos before hurrying back to our car to warm our frozen cheeks and fingers.

 

After Newfound Gap, we went back down to hike to Laurel Falls (I will share more in a later post). Our love of the outdoors must shine through because the first thing we were asked when we stepped out of the car was, "You guys look like you hike a lot." This from a stranger at the trailhead who had a question about the area.

 

The Laurel Falls trail goes up for about a mile on a paved path that has steep drop offs on one side. We decided to push Jack in the BOB stroller and the entire trip he kept saying, "Daddy, youre making me nervous!" Thankfully we made it to the 80-ft falls without a hitch.

 

It was a fun weekend and Im so glad we took a moment to celebrate 13 years of marriage by spending time together as a family.

Busy mornings are typical in most families and ours is no exception.  Im a coffee-first-thing-in-the-morning kind of gal, but I also never go without breakfast.  A super quick and healthy breakfast is oatmeal.  Some mornings go so fast, I put my oatmeal in a cup and eat it in the car- shhhh!


My oatmeal is simple, just oats, sliced almonds, raisins, cinnamon, and topped with a little skim milk.


I toast the almonds in a dry skillet over medium heat for a few minutes to make them more flavorful and crunchy.  Watch them closely though- they can burn easily. 


Then I combine all the ingredients in a large canister and give it a good shake.


I keep a plastic scoop in the canister for easy scooping. 


And the whole mixture sits on the counter next to my coffee. 


You can also portion the dry oatmeal mix into 5 small plastic baggies and take them to work to eat in the office in the morning if you dont want to eat in the car! 


I add water, microwave for one minute, then add a little milk.
