Today (Thursday) marks Day 7 of our 40-day Fat Loss Challenge.  I measured in on Day 1 at 24% (calipers) and today was at 22%!  Woo-hoo!  A 2% difference in 1 week is a big deal!  I'll show you some progress pics soon so you can see what it looks like.  I'm also using my heart-rate monitor (twice) and have been surprised at how little amount of calories it says I'm burning during my workouts.  I'll get into more detail on that in another post soon too.

Today, I'm sharing one of the meals I've been eating- a Grilled Chicken Salad and I always make multiples at a time so I can just pull the assembled salad out of the fridge and I don't have to spend time reprepping.  

Step 1 is to always have grilled chicken on hand or prepare enough for several salads.  If I'm just cooking 4-8 chicken breasts at a time, I use a grill pan.  Spray that pan with cooking spray, and heat to medium-high heat.  I pound my chicken breasts a little so they are thinner and cook evenly.   My seasoning of choice is Mrs. Dash, which I put on both sides, then cook for about 4 minutes per side   or so until they are cooked through, and let rest before eating so they stay moist.

Busy mornings are typical in most families and ours is no exception.  Im a coffee-first-thing-in-the-morning kind of gal, but I also never go without breakfast.  A super quick and healthy breakfast is oatmeal.  Some mornings go so fast, I put my oatmeal in a cup and eat it in the car- shhhh!


My oatmeal is simple, just oats, sliced almonds, raisins, cinnamon, and topped with a little skim milk.


I toast the almonds in a dry skillet over medium heat for a few minutes to make them more flavorful and crunchy.  Watch them closely though- they can burn easily. 


Then I combine all the ingredients in a large canister and give it a good shake.


I keep a plastic scoop in the canister for easy scooping. 


And the whole mixture sits on the counter next to my coffee. 


You can also portion the dry oatmeal mix into 5 small plastic baggies and take them to work to eat in the office in the morning if you dont want to eat in the car! 


I add water, microwave for one minute, then add a little milk.

Hi all!  I hope you had a beautiful Christmas and are ready to ring in the new year!  Many of us have set fitness goals for ourselves and theres no time like the new year to start turning your goals into reality and your plans into action.

If you want to get yourself and your family healthier in the new year, this blog is for you. :)  Last year, I wrote about Getting Started Getting Fit, Making Time to Workout, Time Management Routines, and Waking Up Early to Workout, all of which will help get you started and on your way to a more fit lifestyle.  (Click the photo below to read the entire post).

Ive also posted my most current workout routine, the Live Fit 12 Week Trainer.  As the name suggests, its a 3 month program that provides specific details about what to eat and when, the workouts to do, and proper supplementation.  I completed Phase 1 and Phase 2 last year and am starting Phase 3 now.  Ill share that last part of the program with you later this week.

                            

                          

If youre looking for healthy recipes, click on "FOOD" under my blog header.  You can start your morning with Protein Pancakes (my son requests them quite frequently) or a Breakfast Egg Sandwich. 

To see how I prepare 10 meals in advance so theyre ready to go for a quick lunch or dinner, you can read Food Preparation Day and then try out my favorite Tex Mex dish (its made with extra lean ground turkey and is delicious!).  Making meals in advance is the only way I can guarantee that I eat real home-cooked (not processed or pre-packaged) food every four hours.  My Protein Brownies are a yummy snack with only about 100 calories.  And Im sure we can all start drinking more clean water.  To make your water more fun, why not keep some Spa Water on hand?

Todays recipe comes all the way from my beloved, late Great Grandma, and it was passed down to me by my Grandma.  My Grandma is a great cook and shes always sending me recipes and healthy eating articles shes clipped from magazines, since shes diabetic.  I love that this Hot Chicken Salad recipe is in her own sweet handwriting.  You can tell Ive used it a bunch since the notecard is worn and dirty- a great sign of a good dish!



Over the years, Ive tweaked the recipe some and added a few new ingredients.  I never really measure anymore, opting to just toss everything in- about a cup of each vegetable.  

Ingredients
  • 1 Rotisserie Chicken - I like to use the white meat only 
  • Olive oil - couple tablespoons
  • Onion - diced
  • Carrots- diced
  • Celery- diced 
  • Peas- frozen
  • Garlic- couple cloves minced
  • Light mayonnaise - 1/2 cup
  • Cream of mushroom soup- one can
  • Fat free milk- a glug 
  • Sliced olives - small jar
  • Prepared Pesto - couple tablespoons 
  • Lemon juice - couple squeezes
  • 2% shredded cheese - a big handful 
  • Large shell macaroni (you can use whole wheat) - cup cups dry 
  • Salt and pepper to taste- I usually just add a very small amount. 
Directions
  • Boil the pasta until al dente.
  • In a second large pot, cook the onion, celery, and carrots in olive oil until softened.  Add garlic.
  • Shred the chicken and add to the pan.
  • Add mayo, cream of mushroom soup, milk, olives, lemon juice, and pesto.
  • Add the peas.
  • Add the cooked shells.
  • Stir to combine.
  • Pour the mixture into a baking dish and top with shredded cheese. 

  • Bake at 350 degrees for about 20 minutes. 

  • This is one of the meals I portion out into about 10 small plastic containers and take to work with me.   I reheat it for about a minute.

I made a Greek pasta salad with grilled chicken the other night for dinner and thought you might like to try this recipe with your family.  Its classic Greek ingredients - tomato, cucumber, olives, red onion and feta cheese with whole wheat pasta, grilled chicken, and a homemade vinaigrette dressing.


I actually prefer this salad cold, but you can eat it warm also. I used penne pasta, but sometimes I use spirals.  For busy weeknights, I like meals like this that I can just throw together.  Of course, its nice to have left-overs for lunch later in the week too.

Ingredients (Salad)
Serves about 6

Tomato- 3 small diced
Cucumber- 1 large diced
Olives- 1/4 cup sliced
Red onion- 1/2 cup
Feta cheese- 3/4 cup crumbled
Whole wheat pasta- about 2 cups cooked
Grilled chicken- about 4 large boneless, skinless breasts
(fresh basil would be good in this salad but I didnt have any on hand)

Ingredients (Vinaigrette)

Whole Grain Mustard- 3-4 teaspoons
White wine vinegar- 1/8 cup
Dried basil- 1 teaspoon
Salt- dash
Pepper- dash
Olive oil-1/4 cup

  • Combine all the ingredients together except the olive oil and stir.  Then whisk in the olive oil.  
  • You can adjust the ingredients depending on your taste preferences.

Directions

  • Boil the pasta according to package directions.
  • Spray a grill pan with cooking spray and cook the chicken until done.  Then cut into cubes.
  • Add the diced tomato, cucumber, olives, onion, and cheese with the pasta and chicken.
  • Pour the vinaigrette over the salad and toss it all together.

Now that Ive completed the Jamie Eason 12-Week Training Program, I needed to figure out what to do next.  The last couple of weeks I slacked off on my workouts, so time to get back to it!  I want to continue the strength training (especially on my legs/glutes) and picked a few of my favorite workouts from the Jamie Eason program and will continue to do those to build muscle.  I think they are all from Week 7 of the program.  Im also looking forward to trying the spin classes at my gym, and now that the weather is warming up here, Im going to start jogging outside again.






I went ahead and printed the workouts (Arms, Back, Shoulders, and two Leg workouts), wrote in the weight I typically lift for easy reference, them laminated them so I can use them while I work out.  I could commit them to memory, but this is easy and mindless so I dont have to think about what comes next.  


I have printed out all of the workouts from the 12-week program and keep them in a binder, along with my measurements so I can track my progress.  The binder is just an inexpensive 1-inch white three-ring binder with a plastic cover, so I inserted something to motivate me on the front. 


I love the shot of this strong woman climber and the quote that accompanies it.  


And on the back, I included a shot of a muscular and feminine physique I admire.  That booty- dang! 


Those pages are from Oxygen magazine.  The binder lives in my workout bag along with my mini i-Pod, workout gloves, and water bottle.

I wanted to share with you a food shortcut that Ive used in the past that really works well when you dont have time to cook, but want to eat healthy.  I typically like to cook our meals, but this is another option.  My Fit Foods is pre-cooked, fresh, refrigerated packaged meals that you just heat up for a couple minutes and they are ready to eat.  A while back, we bought enough meals for our family for several lunches and dinners.  I buy the small, but the large would be about enough for two meals for me.  Normally, I might just buy a couple a week to take to work for lunch so I dont have to go out or bring leftovers.


One of my favorite meals is the Atlantic Baked Salmon with quinoa and broccoli.  But I also really like the salmon cakes, chicken wrap, and chili.  They have breakfasts too and tons of choices.


The nutrition information is provided on each package, like this for my salmon:


All of the meals are based on a  40% low glycemic carbohydrates, 40% lean protein, and 20% healthy fat.  

I know My Fit Foods is in Texas and opening a location in Phoenix too.  Im wondering if theres something similar where you live, and if so, have you tried it?  What do you think?  I remember before I tried it, the thought of pre-packaged foods sounded pretty bad, but they are actually good and you cant beat the convenience.   p.s.  Im not being compensation by MFF for this post- I just wanted to share:)
