Summer is in full swing here.  Hot days, flip flops, pool time, and quick dinners cooked outside on the grill.  This meal is one of my favorite summertime suppers and is so easy to pull together.  Fresh corn is begging to come home with me from the grocery store and I cant get enough of it.  Tomato and avocado salad is a year-round favorite, and so colorful with this dish. And finally, a marinated skinless, boneless chicken breast is grilled to juicy perfection. 


Marinade (Finger Lickin Chicken Marinade from Food.com)
-for 4-6 chicken breasts
  • 1 cup oil
  • 1/2 cup vinegar
  • 2 tablespoons Miracle Whip Light
  • 3 tablespoons Worcestershire
  • 2 tablespoons lemon juice
  • salt and pepper to taste
  • 2 tablespoons thyme
  • 1 tablespoon garlic salt

Mix all the ingredients together and marinate for at least 30 minutes and up to overnight in the refrigerator.  Grill the chicken for about 8 minutes on each side, depending on the size of the chicken.  


This marinade makes for delicious chicken friends, really moist and flavorful. 


Tomato & Avocado Salad
  • Tomato (4)
  • Avocado (3)
  • Red onion (1/3 cup) 
  • Light ranch salad dressing (couple tablespoons)
  • Tony Chachere salt-free seasoning (to taste)
Dice the tomato, avocado, and red onion and toss together with the dressing and seasoning.

Corn-on-the-Cob

  • Shuck the corn and boil for about 8 minutes.

This year we decided to take a little tour of some of the top breakfast joints in the area close to our condo in Laguna Beach. I love a good breakfast – especially at a local dive – so we hit up the best places we could find as listed by Trip Adviser and Zomato (formally UrbanSpoon).

First up was Donut Hole in Rosemary Beach. We loved Donut Hole in Destin, but I think we liked this new Donut Hole better. Probably because it was a much bigger restaurant and we had absolutely zero wait.


We actually almost didnt find the restaurant as it is so new that our GPS could not find it. Its not the same diner atmosphere as the Destin location, but it was still delicious food. Outside the restaurant were game areas including ping pong and a Donut Hole game (basically Corn Hole) so that you would have something to do if there was a wait.


I had a Seafood Omelet (which was fantastic), while Jack discovered the little jelly packets on the table and insisted on toast and pancakes at every breakfast place, and Daniel had a healthy Grilled Chicken Salad (it was noon after all). 


When we paid our bill we all chose donuts from the donut case. They were excellent. We are definitely fans of Donut Hole (#4 breakfast place in Panama City Beach on Trip Advisor).

FATTY PATTYS

On Day Two of our trip, we went to Fatty Pattys for breakfast. The slogan for the restaurant is "For the little fatty patty in all of us." I thought the slogan was hilarious. 


Great coffee and excellent breakfast. I had the Cinnamon Roll Pancakes with Eggs and Bacon, Daniel had a Chocolate Chip Waffle and Jack stuck with his pancakes and toast. 


Our waitress told us to be sure to grab donuts at Thomas Donut & Snack Shop in Laguna Beach.


We all loved Fatty Pattys and would plan on going back if we were in the area (#3 breakfast place in Panama City Beach on Trip Advisor).

JESSES PLACE

On Day Three we tried Jesses Place. It is a family-owned diner in Panama City Beach.  They serve breakfast and are also a meat-and-three, serving food until 2pm.


Our waiter was the son of the owners and he was great. We had wonderful service, the food was good and he kept gushing over our two boys. Its not often you have a young man gush over kiddos. 


Daniel had the Papas Breakfast, I tried The Classic and we stuck with getting Jack toast. All of which was delicious. We were the last to leave the diner and they never hurried us. 


We are big fans of Jesses Place and glad we made the stop there (#1 breakfast place in Panama City Beach on Trip Advisor).

Finally, on our last morning we grabbed a donut from Thomas Donut & Snack Shop as advised by our waitress at Fattys Pattys. She suggested that we arrive early to get a good donut before they ran out.


Daniel took Jack and they got a donut with sprinkles for Jack (of course), a chocolate glazed one for Daniel and I had a Key-Lime Custard Filled donut. They werent super fresh, but they were all delicious (#2 breakfast place in Panama City Beach on Trip Advisor).

We ended up trying the top 4 bakeries/breakast eateries in the Panama City Beach area and really liked all of them.

I have had some questions about how I am feeling so I thought I would share what it has been like for me to experience Polyhydramnios with this pregnancy. If you have missed my previous posts, I have too much amniotic fluid in my uterus which makes my belly really big and it also causes early contractions (and possibly labor) because my body thinks it is further along than it is. For me it meant a hospital stay at almost-30 weeks to stop contractions.

Yesterday I had my follow up with the high-risk OB. Their ultrasound measurements showed the fluid is currently 21cm (which is below the risk). The measurements are a bit of an art project with different people getting different numbers (last week I was still measuring 25cm). The doctor I saw said they will continue to measure and assess me on a weekly basis for now. According to him, once I make it to 34 weeks, they would not try to prevent birth if I went into labor. He also mentioned wanting to induce me at 38 weeks. We shall see... my regular OB thinks I can go to 40 weeks and doesnt seem to feel inclined to speed up the process. As with all of our previous ultrasounds, this baby is staying head down.

So, how does it feel to have Polyhydramnios?
Big Belly.
At 32 weeks pregnant I look like I am much further along than I am (comparison photo of when I was pregnant with Jack at bottom of post). I get a lot of questions about my due date and then incredulous (or sympathetic) looks when I say that Im not due until mid April. I have had a few joking comments about expecting twins, but mostly I get sympathy. Believe me, I know Im getting big. At least (for me) you cant really tell Im pregnant from behind...
 
Difficulty Breathing.
Starting around 20 weeks, I began experiencing a lot of instances of being light headed. For no reason, I will catch my breath and it feels like a giant weight is sitting on my chest. This feeling has progressed over the last 10+ weeks due to the excess fluid that is pushing on my lungs and organs. Thankfully I am not having actual problems breathing, but it can be really uncomfortable. This is also a major reason I continue to exercise. Aerobic activity improves the efficiency of the bodys cardiovascular system in absorbing and transporting oxygen, which is important when your lung capacity is diminished due to extra fluid taking up space.

Eating/Heartburn.
Also around 20 weeks I noticed that I felt extra bloated. This continued to where eating even small amounts makes me feel generally miserable. I feel hungry all the time and eating just makes me feel crappy. The best way I can describe it would be how you feel at the end of your pregnancy, except I am only 32 weeks and have felt this way for the last couple of months. Worse, it gives me heartburn like I cannot describe. I take Nexium every morning and supplement with Tums. In the beginning Nexium really helped, now I am just managing as best I can. I can get extreme heartburn from something as basic as drinking water or even the smell of food.

Braxton Hicks.
I had some Braxton Hicks with Jack, but not enough to really be of note. Around the time I started feeling this baby kick (18 weeks) I started having Braxton Hicks. They happen regularly throughout the day and do not hurt at all. They did land me in the hospital when I had them non-stop, every 2-minutes, for 12+hours straight (I was almost 30 weeks). They do not cause me any pain (Ive had paper cuts that hurt worse) but they are uncomfortable. At this point we are praying they do not jump start real labor. A few of the things that cause my Braxton Hicks include: standing up, sitting down, laying down, working out, grocery shopping, driving my car, walking, not drinking enough water or having a full bladder... I think this is also considered having an irritable uterus.

Very Hard Belly.
I have experienced a very hard belly since the beginning of my second trimester. This makes it really hard to give myself my daily shots in my belly. It also makes it very uncomfortable (and sometimes painful) when Jack wants to be held or if he wants to cuddle by laying on my belly. He has learned to be very gentle, but it is very difficult for me to have him lay on or beside me. This makes me sad because I want to be able to cuddle and carry him.

Putting on Shoes.
With Jack I remember having difficulty putting on my shoes some time in the third trimester. With Polyhydramnios, this sensation came much earlier (25 weeks-ish). Any kind of bending over is very uncomfortable due to the hard belly, Braxton Hicks and heartburn. In addition to bending, it is very difficult to roll over or get up from laying down with any kind of grace. This is a normal thing for later in pregnancy, it has just been uncomfortable and hard from a much earlier point for me. Shaving my legs is not gonna happen until after this baby arrives.

Heavy Belly.
Also starting around 20 weeks, I noticed that my belly felt incredibly heavy when I would lay down. It required extra pillows for support. All of the extra fluid just makes everything hurt. I dont really recall this with my first pregnancy.

Comparison: Pregnant with Jack, 32 Weeks

So, I guess the best way to describe having Polyhydramnios is experiencing typical end-of-pregnancy symptoms, just worse and much earlier. I still have 8 weeks to go with all of these lovely symptoms.

I want to be as transparent as I can on my blog, and this last week I didnt do a lot of cooking. After being gone for a week, I am still settling into normal life. We ate out some and had a lot of leftovers. Sometimes that is just life! Here are the links to the recipes I tried this week, along with my thoughts on each:

Pumpkin Pie

You can never go wrong with Pumpkin Pie. I made this to celebrate Canadian Thanksgiving. Jack and I gobbled it up over the course of the week.

Spaghetti with Meat Pomodoro Sauce

This is the same sauce I used with gnocchi a few weeks ago, and it worked great with Spaghetti as well. I added crumbled Italian sausage for some protein.

Chicken Enchilada Casserole
[recipe via Jo Cooks]
I dont make a lot of casseroles, mostly because they make too many leftovers and there is only so many times you can eat leftover enchiladas, but this is a good dish. 

Probably better for a crowd though! I accidentally bought a green enchilada sauce instead of the red, but it still tasted good. I served it with corn chips (maybe carb overkill since the dish has rice it in), very good though.

Brown Sugar Turkey Meatballs with Mashed Potatoes and Carrots

I actually made this to take to a friend. It is some serious comfort food. I will have to make it again for us. Definitely a winner for a quick comfort food meal.

Talk about a crowd pleaser! I made this for our small group and it we about finished the pan off... granted the were 16 people that dug in, this stuff went fast!

I love coconut oil!  I use it for lip balm, lotion, cooking and several other things! Its pretty much amazing. Its anti-inflamatory, anti-microbial, anti-viral and helps you to absorb more nutrients from your food. You can use it for moisturizer and even deodorant.   Kael thinks its pretty awesome, too.  He wanted to put some on his lips yesterday, so I let him. Then, I just watched as he continued to rub it all in his hair and eat finger scoops of it. He must have been listening to me earlier when I was telling Sam how good it is for curly hair...haha.  I figured the mess would be minimal and he was having fun experimenting with the texture. Needless to say,  Kael smells like a tropical beach boy. =)

Its been awhile since I have had the time to post a "Chat with Jack" and it isnt because we have been lacking in interesting conversations... Life with a newborn doesnt leave a lot of time for blogging! These are the types of things Jack tells us out of the blue...


At bedtime, putting on jammies, Jack points to his nipples and says, What are these, mommy?
Me: Its your chest.
J: No, what are these? [again pointing to nipples]
Me: They are called nipples.
J: Do you have them? I want to see.
Me: Um, yes I have them and no you cant see them.


Do you trust me? [not sure where he heard this]


Why did God make it dark sometimes and sunny sometimes?


Watch me! or Look at me! [over and over ad nauseam]


Failing to adequately explain why the flowers come out in spring, I told Jack he would have to ask God...
J: Where is God?
Me: In Heaven
J: But where is Gods house?
I changed the subject because I wasnt sure how to answer this to appease a 3 year old.


I need some kind of sharp sword to cut it [a package] open.


J: This is my house.
D: Where is daddys house?
J: Your house is called work.
D: Where is mommys house?
J: Here, she can live here with me.
D: Do you want me to live here?
J: Yes. I miss you every day.


Joke as told by Jack:
Did somebody say potato salad? [laughs hysterically]


When I drop Jack off at various places, he always asks:
J: Will you miss me mommy?
Me: Yes, Ill miss you. Will you miss me?
J: No. But I miss daddy.


Oopsie 


I have a question for you: 
[proceeds to tell me something instead of asking a question]


Let me tell you why we bring you flowers: because we love you. 
[followed by a sweet hug]


Mommy, I brought you more flowers because the others were starting to be dead.
[brought new flowers on the day we came home from the hospital]


J: I just farted. I cant stop my farts.
D: Its ok to fart.
J: Its good for me to fart, Mommy.


I want chicken nuggets, chocolate milk, snacks and my Chapstick. Thats all I need.


Mommy, do you want to go to preschool, the Y or the Discovery Museum today?

We have four family now.


My baby likes me.
I think he likes me.


Us: Do mommy and daddy have rules?
J: Yes
Us: Does Nana have rules?
J: No
Us: Do Amy and Emily have rules?
J: Yes


Whats our first mission?

Can I have a cinnamon? [he meant vitamin]


I love you all so much.


Well I guess I better get camping.


I want to go [to preschool] every tomorrow.


Can we ride in the car [in the middle of the night] every night?

The button on the wall is in case you need to call the nurse if you need help. Or in case theres a monster. [in reference to nurse call button at hospital]


[sleep talking while sick]
J: Hey mommy? 
Me: Yes?
J: Babies drink warm milk and Jacks drink cold milk.
Me: Ok honey.
[falls back asleep]


J: We didnt lay on the blanket... we had a special thing that rolled and folded into a chair. Daddy had one and I had one. 
Me: Was it a creeper? 
J: Yep


That hurts my feelings [when Isaac cries]
When Sophie barks and Isaac cries, that hurts my feelings.
