On our final full day in Florida, we all agreed that we should go to the beach. St. George Island is located about two hours from Tallahassee, and the drive along the Forgotten Coast was serene and beautiful.


En route to St. George we made a stop for lunch at the Red Pirate Grill for fried fish and oysters. Jack was a little disappointed that he didnt get a corn dog, but managed to devour his fish platter anyway.

After our fill of seafood, we took the long bridge across the bay and made our way to the State Park at the end of the barrier island. On the way we passed miles and miles of undeveloped beaches.


St. George Island is a little slice of paradise sandwiched between the Gulf of Mexico and the Apalachicola Bay, with very little development other than beach houses.



I think it would be amazing to come back and camp here, just for a view of the stars at night. The lack of development in the area means no light pollution and pristine skies.


One surprising thing were the number of Monarch butterflies. Evidently it was the right time of year for the butterfly migration to the Gulf and they were everywhere! I loved how much wildlife we were able to see during the course of our week in Florida!


As expected, my sister came prepared with an umbrella and camp chairs for everyone (I am the sibling that tends to fly by the seat of my pants, my sister is the one who is always prepared for everything and our brother is along for the ride). In addition to seating, she had snacks. You always have to have snacks with kiddos in tow.


The kids had an absolute blast running in and out of the water, attempting to boogie board and helping their Uncle Mark build a sand castle. It was a beautiful day to be at the beach.


The water was a little on the cool side and we teased our Canadian mother for not wanting to go under water because it was too cold! After a little teasing about the Gulf of Mexico being too chilly for her, she was brave and took the plunge. I on the other hand, did not :)


Of course Isaac just chilled in the shade, even managing a nap (what he seems to do best). We have also discovered that our Camelbak water bottles are his favorite thing to chew on to soothe him as he teethes.



After the sand castles had been built (and stomped on) we decided to head home. It was 5 oclock and we had a two hour drive back to Tallahassee so we decided to stop at Aunt Ebbys, a local ice cream shop, to help stave off our starving kiddos. Ice cream is always a good idea, especially at the beach!


It was a wonderful end to our Fall Break and visit to Florida. We had such a lovely week and had a great time doing lots of fun things with loved ones. Jack especially loved getting to ride everywhere with his cousins in their van – he seemed so grown up on this trip!

The last couple of weeks have been super busy. We have had quite a few events to attend which has meant lots of eat outs and lots of leftovers. Thankfully fall meal planning is great for leftovers – chili and soups tend to taste better with time, and we made good use of both in recent weeks. Here is what I have been cooking lately, I hope some of these recipes encourage you to cook more at home!

Chicken Marsala with Rice and Carrots

Originally I had planned to use a slow-cooker recipe from Creme de la Crumb, but once again I have been reminded that I am not a slow-cooker cook. Mostly because I get too busy and dont remember to start the meal in a timely manner. So I pulled an audible and found a recipe from Fancy Fork that incorporated most of the ingredients I had already purchased.


The only thing I didnt have in my pantry was tomato paste, so I substituted with sun-dried tomatoes, which I think added a nice flavor to the dish. For Jack, I kept some chicken tenders separate from the sauce. Overall, a great dish.

Chili with Triple Cornbread

This is one of my all-time favorite fall meals. I dont cook many meals more than once, but this chili and cornbread makes an appearance a handful of times each fall. It is great for a crowd, and if it is just going to feed a small family, the chili tastes better with each passing day.


I love this cornbread because it is super moist – more like a bread pudding than cornbread. It was perfect for letting Isaac have a taste as well. Chocolate and cinnamon are my somewhat secret ingredients in the chili and they really make the dish. I skip on the jalapeno when serving to kids, but it still tastes delicious and has a bit of heat from the spices.

Personal Pita Pizzas


I dont have a recipe for this. I just got inspired when my brother-in-law made us pita pizzas when we were visiting last month.


Basically you take Pita bread (or Naan bread) and brush olive oil on it. Bake for about 10 minutes at 350ยบ then remove from oven and add pizza sauce, toppings (I used sausage, bell peppers and onions), then top with mozzarella cheese. Bake for another 10 minutes. These are really customizable, great for kids, and a fast mid-week meal.

Vegetable-and-Steak Soup with Croutons

Croutons in soup is one of my new favorite things (I buy store-bought, but the recipe tells you how to make homemade). We use them instead of saltine crackers. The only problem is limiting Jack on how many croutons he can eat with his soup! 


Since my husband loves meat, I added steak to the soup to make it a little heartier. We were all fans of this meal and it tasted even better as leftovers later in the week.

Sausage-Egg-Pancakes Muffins

I had some leftover pancake mix [my moms recipe] and leftover sausage from the pita pizzas, so I decided to make pancake-egg muffins. I have made this before with bacon, but this one was a little difference since I had sausage. I used a Scrambled Egg Muffin recipe from AllRecipes but used a pancake base like I had before, and added cheese.

These were a hit with everyone and really simple to make, plus you cant go wrong with breakfast for dinner. They are easy to customize which is good if you have picky eaters (Jack isnt too picky but he doesnt like green peppers).

Super Simple Banana Muffins

I recently picked up some really ripe bananas from our local grocery store ($0.88 for 6). These were perfect for this muffin recipe. I just hand mixed it and baked in a muffin tin for 18 minutes (instead of 60 minutes for a loaf of bread). Like chocolate chip cookies, there are a million recipes for banana muffins, and from my experience, I rarely find a bad one! These muffins were super moist and great for preschool mornings when I am running behind.

Apple Spice Cinnamon Sugar Pound Cake Bites

This super simple dessert was perfect for a potluck we attended recently. You toast the pound cake and roll it in a special Apple Cinnamon spice mixture. I had enough spices leftover that I saved it and added it to the top of my banana muffins before cooking, and it was also a good addition to our Saturday morning pancakes.

The past week has been a whirlwind of Halloween activities, and we didnt even make it to a Trunk-or-Treat! I dont recall my childhood having this degree of celebration. Overall it has been a lot of fun, but like last year, Jack ended up getting sick on Halloween day. I guess all of the festivities are a bit much for an almost 4-year-old.


Our Halloween celebrations started last Saturday with a neighbors dress-up birthday party and outdoor movie. Jack had so much fun running around and playing with the neighborhood kids dressed as Iron Man.


This was followed by Friends and Family Day on Sunday at our church. This included a potluck and then an afternoon hayride, devotional and outdoor movie, complete with kettle corn, donuts, hot apple cider and coffee. We managed to stay until the end of the movie, even with Isaac!


On Wednesday night our church had their annual Halloween costume parade. This was Night #2 for Jack as Iron Man. He had so much fun pretending to be a super hero with one of his best friends who was Wonder Woman. 

 

Isaac was dressed as the Stay Puft Marshmallow Man and received quite a bit of attention.


Thursday was Jacks Halloween party at preschool. On this day he was a fireman. He insisted that the fireman was his "real" Halloween costume.


Friday night our small group had our annual Reverse Trick-or-Treat night at the Martin Boyd nursing home. We take our kids, dressed in the Halloween garb, to hand out candy to the residents and nurses. 


This is the highlight of Halloween for me and it brings great joy to the residents – many who do not get a chance to see children celebrate this holiday. 


Jack was Iron Man for the third time and Isaac was once again the Stay Puft baby. Most people guessed correctly what he was, but we also had people ask if he was the Michelin Man or the Pillsbury Dough Boy – all of which are good guesses!


Friday Jack mentioned that he felt like he had a fever. He was right, but it was mild so we gave him some Tylenol and hoped for the best. He had been so excited for the real Halloween, we decided to let him rest all day and make the effort to go trick-or-treating.


On Saturday Jack seemed to be feeling better, so we bundled both boys up and headed out to meet our friends. On the way to our friends house, Jack brought up the fact that we hadnt cut up our pumpkin... one of these years we will get around to everything!


Trick-or-treating with our friends is becoming such a fun tradition. Jack rode in the double stroller with Wonder Woman and had a wonderful time, even though he was a bit under the weather.


Both boys were fire fighters (it was too cold for Isaac to be Stay Puft) and Jack collected a decent amount of candy (which will be subject to the Parent Candy Tax). At one house a teenager jumped out from behind a tree and I had a good scare. 


At another house there was a witch with a smoke machine. Jack marched right up to the door. At first we thought he was scared because he seemed frozen on the door stoop... then we realized that he was negotiating with the witch over which piece of candy he wanted!


That wraps up our Halloween week. Both boys fell asleep as soon as we put them in the car. Jack has developed a pretty bad cough, so we are taking it easy at home today in an effort to recover. Until next year...
